Surrounded by wheat fields, with full solar panels on roof top, this was Joy & Hope Bakery, such a small place which was humble and once made us lost, but full of fragrance of flour, enthusiasm of baker, a hearty burst of laughter and detailed introduction from Mr. Shih who is the President and also fellow workmate.


Stepped into the bakery, although the light inside was not very bright, but once the door opened, I saw the extended line hanging in midair, but I had no special feeling at that time, until Mr. Shih asked us “have you seen others hang like this?” I was suddenly reacting “No!” Mr. Shih’s carefulness was right here. He put the extended line hanging in midair, which was convenient to take and also avoid disorder and solve problem of stumble. Moreover, there was a drive-through board used for hanging tools, with pictures of each tool’s outline border, as long as something not back, you could know immediately.  

     The purpose of this visit to the bakery was not to buy bread, but to make your own bread. Mr. Shih made several modes first for us to demonstrate, he said that’s the reason why he was the chief one who “hold two or more jobs concurrently” but not the chief “inspector”, because he was not only responsible for management by semantic tricks, he could really make bread and also do a lot of things big and small. The students rubbed dough happily, since it was a fresh touch for most of them who were curious of whether it will work.

       Waiting for fermentation time, we appreciated the wheat field in which we took photos. When the bread baked, sweet fragrance was diffused all around in the air. It was not flavor of essence, but the good taste of baked true bread. It liked a rebound of teeth while bit the first bite and it was very chewy, everyone could not help but shout out, the bread in Taiwan made from wheat grown by them was really moving. When the clear yellow light driven away by the dark, we said goodbye to each other. Sitting in the car, I reviewed what happened today, with my mouth up, because in addition to making bread today, I really learned a lot of knowledge, even of a good harvest that came back with fruitful results! 2015/02/06Report on visiting Joy & Hope Bakery[Yu-ling Hsiao]


       
When I saw the Joy & Hope Bakery, I shouted from my heart “Wow!” I could only say, how beautiful! Although it was small and also an iron sheet house, but you will never have sense of acosmia (I mean really!). The Bakery was clean and painted, very bright and just right. With the background of wheat, beautiful or not? But it was really hard to find the address, if find by yourself without no guide, you were in cultivating patience! Joy & Hope began to plant wheat in October 2007 which was unconvinced that a bag of flour’s price rose from more than 300 NTD up to 700 NTD. So Joy & Hope decided to begin and integrate from the raw material.

       Mr. Shih introduced that the bakery was in the solar energy architecture. He said the solar energy was the core of all industries. The bread making was energy-intensive industry after all. From grinding wheat to baked bread, then only when you decorated a store like a fairy tale, you may attract consumers to come in and have a look..., etc. When anyone treated as impossible, Joy & Hope always insisted on it. Mr. Shih who deals with a lot of big and small thing had a famous saying, when you want to solve your own problems, solve other’s problems first, then your problems will be minimized. He did his best to convince us!

       When we kneaded the Q soft dough and made out grotesque shapes hurriedly, everyone went outside to take photos in the green wheat fields in the wind, the cold northeast monsoon made us felt cold ~ but we were very pleased, because it was an experience that students never had.
