    1.Pick Up the Tea Stems

During the process of tea making, picking up tea stems is a rather important step. It filters out tea leaves and stem tea tastes sweet and heavy. In the class, teachers invited all of us to experience picking up tea stems. At first, I thought it was a tedious job and I might lose my patient quickly, but it brought us much fun at last.Sometimes, farmers will use machine to pick up tea stems, but it will be filtered out more intact tea stems by human.

The process of making cold-brewed tea :

1.In order to have a perfect ball-shaped tea leaves, tea stems and old leaves , dried and yellow in color, called red leaves, need to be filtered

2.Separate Paochung tea’s tea roots and tea leaves, put tea leaves into tea bag and throw it into a bottle water.

    1. Put tea leaf (75g) into boiled water (6000cc), leave it 6 mins and filter out tea dust.

    2. Stir sugar (370g) and jelly powder (135g) in the plastic bag.  (the amount of Jelly

powder decides soft jelly with less jelly powder or chewy jelly with more jelly powder)

    3. Stir the blended powder on Step 2 into boiled water and keep heating over 95

     degrees.

    4. Pour jelly on step 3 into jelly cup and leave it to cool off.

The process of Making Seed Key Ring :

    1. drill the seed with 2m/m drill bit, 0.7cm between two sides, and drill at 45 degrees

and the two holes can communicate.

    2. with 80 cm a string of the charm, knot a 6 cm circle.

    4.Taipei Tea Art

Professional covered bowl tea masters, Sheng Xian, Chen Guanyu and Song Xuanhui explained every step of brewing tea.  Before attending the speech, I thought brewing tea is to put tea leaf into hot water.  However, if you want to have a cup of good tea, every step of brewing tea is important.  Customers’ tea cup needs to be warm up first.  The flavor and temperature of brewed tea will be retained in the cup.  When drinking tea, with one hand holding the cup and the other turn the cup, you don’t have to raise your head and you can drink the tea at the bottom.  After the speech, I feel myself more elegant.

    5.Brew Covered Bowl Tea

Bowl lid is called “health”, the bowl “people” and the saucer ”earth”.  When you enjoy your tea, one hand with saucer and the other hand with bowl lid, you whisk the leaves floating over tea water.  That’s the pleasure of drinking tea.  Now, the covered bowl is used as a tea pot, and it becomes a brewer. It is easier to see the bottom of tea, to wash the container, and to control tea’s concentration by directly putting leaves into the covered bowl.

    6.Tea-Making Exhibition

In the tea-making exhibition, there were ten machines with different functions for tea-making.  The tea-making masters told us that every step of tea-making was indispensable.  If we skipped one step, the taste of tea would be different. Tea-making requires experience and skills.  It is not easy for us to learn about some  knowledge.  It is thankful for those masters to assist us during our practice.  We learn a lot and thank you, masters.

    7.Tea Mountain Guide

There is a mountain trail behind the Nangang Tea Demonstration Hall. It is good for many visitors to take a great walk and take a rest under the arbor.  With the introduction of the guide, Xu Xiuqin, I had some ideas about plants, creatures and tea plantation ‘s ecosystem.  Those are amazing and we learned a lot.

Today we joined 2018 Nangang Tea Mountain Autumn Joy Festival. The location is quite comfortable.  Slight tea aroma is everywhere.  I experienced the process of making cold-brewed tea, learned about the knowledge of covered bowl tea, realized every step of tea-making, and joined DIY activities.  We learned a lot, tasted lots of good tea.  What is best, all these activities are free.  I hope I will have another chance to experience again.
