Drying the tea |
Drying
After
the process of rolling, tea leaves are dried in the drying
machine, over a charcoal fire, or heated with gas. With high
temperature, enzymes in leaves are destroyed and the moisture is
under 5%. With the drying process, tea won’t be easily
deteriorated. The rolled leaves are spread out on a plate and
place in a drying machine. Those dried leaves are called “Crude
tea”.
