       Fermentation will affect the tea color and aroma.  Fit turns green tea leaves into red.  The higher the degree of fermentation is, the redder the tea is.

    1.non-fermented tea : types of green tea, such as Dragon Well tea and Biluochun tea.

    2.semi-fermented tea : types of celadon tea, which is divided into two categories: light-fermented teas

                                            like Paochung and Tiehguanyin tea, and heavy-fermented teas like Oolong and 

                                            Pu-erh tea.

    3.fully-fermented tea : types of black tea, such as Assam black tea and Taiwan black tea.

    Harvest Season

      According to the harvest season, tea can be classified into spring tea, summer tea, autumn tea and winter tea.  Most of the consumers prefer spring tea but its price is rather higher.  Because it is hotter in summer, tea contains more catechin and its leaves are thicker.

    1.spring tea :

    teas are picked from late March to mid-May. With mild weather, abundant rain and half-year rest, spring teas have thick and soft leaves, and rich in vitamins and amino acid which make teas taste brisk and smell sweet and do good to your health.
    2.summer tea :

    teas are picked from early May to early July. Due to hot weather, tea flushes grow fast and its soluble components decrease. The decrease of amino acid, especially, lightens the taste and aroma of teas where anthocyanin, caffeine, and tea polyphenols contribute more astringency and bitterness than those in spring teas.
    3.autumn tea :

    teas are picked from mid-August to mid-October. Since tea trees are grown in spring and summer, autumn teas have less soluble components, crispy leaf base, yellow leaves, different sizes of tea leaves and refreshing taste and aroma.
    4.winter tea :

     teas are picked from late October. Because of the cold weather, slow growing tea flushes, and increasing components, winter teas taste mellow and thick and have a strong aroma.

    Tea Around the World

      Many countries have their unique tea drinking habit and tea culture. There are some very famous tea around the world:

    1.Chinese tea : West Lake Dragon Well tea, Dongting Biluochun tea, and Anxi Tieguanyin tea.

    2.Japanese tea : the most famous Japanese tea is Sencha tea such as Hojicha, Gyokurocha, Mathca, and Kirara rice tea.

    3.Indian tea : The most famous tea here is Black tea, especially Assam black tea and Darjeeling Black tea.

    4.Sri Lanka : It is famous for its Ceylon black tea with delicate taste.

    Famous Tea in Taiwan

      There are more than two hundred years in Taiwan's tea culture. Various landscapes and climates nurture many different types of tea in this land. There are ten famous teas in Taiwan :

     

    1.Dongding Oolong Tea :

    Dongding Oolong tea is crystal-clear, yellow-golden in color, and has a favorable aroma and a unique sweet aftertaste.

    2.Wenshan Paochung Tea :

    Wenshan is famous for Paochung tea.  Its color is green but gold and has rich floral aroma and sweet taste.  This kind of tea also has a moisturizing effect after drinking.

    3.Pongfeng Tea :

    Pongfeng tea is also called Oriental Beauty tea which is peculiarity  of Taiwan.  It is one of the partially fermented teas with strong fruity aromas. Pongfeng tea in Taoyuan, Hsinchu and Miaoli areas is most famous.

    4.Songbo Evergreen Tea :

     Songbo Evergreen Tea used to be called Songbai Tea.  In 1975, Premier Chiang Ching-kuo inspected local constructions and local tea farmers welcomed him with Songbai Tea.  Chiang thought Songbai Tea, the high quality tea, needed a better name. Therefore, he named it “Songbo Evergreen Tea’.

    5.Muzha Tiehguanyin Tea :

    Tiehguanyin tea is yellow-orange in color and has natural orchid flavor.  It always leaves a strong aftertaste.  Therefore, it featured “Tiehguanyin aftertaste”.

    6.Sanshia Longjing Tea :

    Sanshia Longjing tea is grown on Baichi mountain, Sanshia, New Taipei City.  It is characterized by its green color, tender aroma, mellow taste and beautiful shape.  Therefore, it is considered to rival Dongting Biluochun tea in China.

    7.Alishan Zhulu Tea :

    it is the best representative of Alishan’s high mountain tea.  It is characterized by its completely hand-plucked young tea shoots and the distinctive roast method.

    8.High Mountain Oolong Tea :

    High Mountain Oolong tea is grown on mountains over 1000m height.  The brewed tea has a strong and long-lasting taste.  Taiwan’s High Mountain Oolong tea is mainly grown in Nantou and Chiayi County.

    9.Longquan Tea :

    Longquan Tea is a kind of Paochung tea grown in Longtan Township.  In 1983, Former President Lee Teng-hui named Longtan Township’s tea “Longquan Tea”

    10.Sun Moon Lake Black Tea :

    Sun Moon Lake Black tea is clear and red in color and has a mellow taste.  In 1925, the Japanese introduced Indian Assam tea tree to Puli.  It is the start of the history of Sun Moon Lake Black tea.  Sun Moon Lake is the only place in Taiwan grown Assam black tea.
