Fixing
The
purpose of fixing is to destroy the activation of enzymes in tea
leaf with high temperature, inhibit fermentation and retain tea
leaves’ flavor and aroma, especially the unique aroma of partially
fermented tea. During the step of fixing, a large amount of
moisture in tea leaves evaporates and makes tea leaves soft. This
is good for later rolling, shaping, and drying.
