After
picking, leaves are left in the sun, not strong sunlight, to
remove excess moisture and oxidize the leaves. When the leaves
become soft and the luster on the leaf surface fades away, tea
produces better flavor. Then, leaves are withered indoors.

Withering
After sun
withering, the permeability of cell membranes in tea leaves has been damaged
and physical and chemical changes in tea leaves occur. Indoor withering
refers to leaving tea leaves indoors to continue withering. With the
fermentation, tea leaves have unique taste and aroma. It is called
“moisture evaporation”.
