Soup is the soul of beef noodles. The gourmets will know the boss’ personality once they taste the soup. Boss Yang, the owner of East Market Beef Noodles, must be a mild and honest person.

This shop has been opened in east market over two years. Before the shop is opened in east market, Boss Yang had run his beef noodles business for seven to eight years in another place. In 2008, Boss Yang went to Hong Kong with his cousin to learn Cantonese cuisines and he brought this specialty back to Douliu. The Cantonese chef taught Boss Yang the spicy Sichuan flavor beef noodles, but Boss Yang adjusted the recipe. Usually the beef noodles soup is very oily.

Shrimp Wonton Noodles are also very popular. Boss Yang uses round dough wrappings instead of square dough wrappings on the shrimp wontons. And he also cooks the wontons by boiling with water instead of steaming. The ingredients are mixed with five to six spices in shrimps and grounded meat to keep the wontons juicy.
