The owner, sixty-three year old Zhang Qi Quan, has been interested in cooking since he was young. A former sushi chef in Taipei’s Ximending area, he returned home by chance and took over the West market roast chicken stall. He has now been running the business for more than ten years.

Roast chicken and brine chicken are his best selling dishes. The unique flavor of the roasted chicken, its juicy meat and sweet fragrance is so beloved that they sells out by noon.

Regardless of the business’ success, Mr. Zhang chooses not to increase production, as to not affect the quality of the product and his personal life. Instead the stand sells out each day.
