Mud Shrimp
Walking along Lukang Old Street, we smelled something delicious, so we followed the smell and discovered the mud shrimp store. The golden fried mud shrimps looked very delicious. I couldn’t wait to try it!
(Figure 1) The mud shrimp, only living in the mud along the west coast of Taiwan, is very special. They, good at digging holes, usually live in the holes in intertidal zone. Unfortunately, the number of mud shrimps is decreasing due to overfishing and pollution.
(Figure 2) People living in coastal areas of Lukang used to be poor and had no refrigerators to freeze food, so they persevered food with salt. Fried mud shrimps, crispy and chewy, smell delicious, so tourists love them!
Postscript
Lots of tourists like to order fried mud shrimps, mostly made from cheaper male mud shrimps or pregnant female mud shrimps. In order to satisfy tourists with the unique dish of Lukang, fishermen now use newer techniques to catch mud shrimps.
