There are many instrument boards on the tunnel freezer, and one of them shows the number of 120 degrees below zero centigrade. My goodness! We can hardly imagine such a low temperature when comparing the tunnel freezer with our household refrigerators. The quick freezing process means that the fillets are frozen in the liquid nitrogen. This is also the final process in the food processing plant of Taiwan tilapia.
