The workers operate machines to remove the first layer of fish skin of those sliced fillets, and then remove the second layer of fish skin by hand. We saw the workers placed the fillet on a white board and gently moved the fillet back and forth, just like to massage the fillet. This step has a special intention. It can increase the mouth feel of flesh. Really incredible!
