After the fish skin is removed, the fillet can be sent to a sterilization room. The fillets are taken from baskets one after another, and then are placed in order into a water tank, which is fully equipped with wires and pipes, to take a spa. This water tank is not a massage bathtub. It is the hi-tech sterilization equipment.
Next, two workers on a platform place the fillets on white towels, cover the fillets lightly, and stack up one layer after another. This step can help to drain the surplus water.
