Introduction

King Oyster Mushrooms(Pleurotus eryngii)

Also known as king trumpet mushroom and Pleurotus eryngii, king oyster mushroom grow in Mediterranean area, Middle East, North Africa and some parts of Asia. Its stalk is thick and white and its cap small and brown (when young). When uncooked, it gives out faint fragrance. After cooked, it smells of freshness and its texture resembles abalone. It can be said to be the king of mushrooms.

Nutrition

King oyster mushroom is nutritious. It riches in many kinds of vitamins, fibers and proteins, which is an important nutrition to the body. It also abounds with polysaccharide that prevents cancer, strengthens immune system, prevents cardiovascular diseases and clears away serum cholesterol, so it is a natural anticancer health food.
King oyster mushroom can also effectively stimulate bowel movements, detox your body to further maintain skin luster and improve your complexion. King oyster mushroom tastes delicious. It helps to strengthen the spleen and stomach. Moreover, it is a good dietary therapy to gastric ulcer and indigestion.

Cultivation

King oyster mushrooms’ effective cultivation skill was introduced to Japan in 1993, and then its cultivation became commercial before it was sold to Australia. In 1996, Agricultural Research Institute – Peng Jin Teng – used hybridization to cultivate a new variety and patented it, naming it king oyster mushrooms. Taiwanese variety of king oyster mushrooms has small cap and big stalk, and its appearance is different from its original form. Nowadays, farmers use shiitake bags, aseptic rooms, air conditioning facilities and so forth to improve its quality and stabilize its yield.

Common Dishes

King oyster mushroom’s texture is delicate. It tastes smooth and sweet. It can be made into cold king oyster mushrooms, blanched or fried king oyster mushrooms. It is mainly cultivated in Central Taiwan and often used to replace meat, so it is a good ingredient for vegetarian dishes, such as Three Cups King Oyster Mushrooms, Braised King Oyster Mushrooms, Plain-fried King Oyster Mushrooms with Olive Oil.

Notes

King oyster mushroom (Almond Abalone Mushroom in Chinese), obtaining its name from the aroma of almond and the taste of abalone, is a commonly seen ingredient in vegetarian dishes. When uncooked, it gives out faint aroma. After cooked, it smells of typical mushroom freshness and its texture is similar to abalone, so it is often used to replace meat. It is a delicious and healthy ingredient especially for the fat, diabetics and patients with hypertension.
