      Steamers are the most important for making the steamed pork dumplings, so Din Tai Fung care about the steamersgreatly.

      The steamers at every store need to come back to the central kitchen once a week to be cosmeticized. First, I’ll tell you about the steamer’s bathhouse. In the bathhouse, there are three iron boxes. The first and the second boxes are for hot water. The third one is for cold water. All steamers will be put in the first big box to dip in the 65℃ water. Then they go into the second box to be scrubbed and washed. Next, the steamers will be flushed in 26℃ water. Last, they will go to the steam platform to enjoy a steaming bath about 10~20 minutes. Hot water, cold water; flush, dip, scrub, wash, steam! This is just the steamers’ SPA room!

      After the cleaning process, the steamers will be sent to another room. It is the hottest room with the lowest humidity in the whole central kitchen. This kind of temperature and humidity prevent the steamers from mildew. The steamers will be pile up like a pyramid. Then the professionals will make sure that the steamers are well cleaned before they send them to every store.
