Super Refrigerator 

      For standardizing, Din Tai Fung’s central kitchen has a standard procedure, standardized measurement, and exquisite division of labor. They also bring in some modern equipments to ensure the food’s quality.

      So now I will introduce the refrigerator in Din Tai Fung’s central kitchen. Their refrigerator is separated in two parts. The first part is specially for freezing the dumplings. In is called the “copper pipes refrigerator.” Another one is the normal fan refrigerator.

      Although it is a regular fan refrigerator, it had been studied and improved for Din Tai Fung’s use. They separate this refrigerator into three parts. The first part’s temperature is about 40℃~85℃. The food that was just been made that are very hot will be send into this part. Later the temperature will descend from 85℃ to 40℃. The second part will bring down the temperature from 40℃ to 5℃. The third part will have the temperature from 5℃ to -20℃. Why do they need to separate the refrigerator into three parts? They want to avoid the food from being stale by taking in and out of the refrigerator.

      Then there’s the especially cold refrigerator that is worth about 3 million more. It is a copper pipe refrigerator, not the fan refrigerator. The temperature of the refrigerator is -28℃. This kind of refrigerator, normally, is for very good quality vegetables. Din Tai Fung uses it to preserve the moisture in the dumplings. If the dumplings it had been blown by wind, the cover will run-off of water. So, the finished-dumplings will first be sent to here, then downstairs to be packed.
