      People say, “A restaurant’s soul is its food.” While you enjoy the mouthwatering dishes of Din Tai Fung, their employees are busy making these products. Let us look into the Back Kitchen!

      When you first step into the Back Kitchen, you will see a LED screen. A list of orders are displayed on the little electronic screen , thanks to the convenient automation system that the company developed.

      The employees in the Back Kitchen follow the SOP rules. For example, when someone orders a bowl of fried rice, how should they make it? Din Tai Fung’s fried rice are all made in its SOP process. First, the cooks take a little bowl and fill it with rice. Then, they make sure that every bowl weights the same. Finally, they fry the rice. When they add the seasonings, they use the packages that are made in the company’s Central Kitchen. They believe this will make all the fried rice taste the same.

      What about cooking vegetables? Well, they add “seasoning water” and oil. They measure it with c.c. Also, they have a full-automation noodles cooking system. All you have to do, is to press a button. After a few minutes, the noodles are ready.

      An interesting thing is that Din Tai Fung’s Back Kitchen’s rags are only allowed to be used once after cleaning. More surprisingly, they hire people to clean the rags with machine.We see that Din Tai Fung care not just about their food, they also try to keep good hygiene in their restaurants.
