      This department is very important in Din Tai Fung. Its role is like an imperial envoy, who reports all his findings back to the emperor, in the ancient times. The department is very strict with the quality and sanitary of the food. It will not tolerate any flaws in its food products. Let’s talk about their jobs.
1.Monitoring ingredients
      Although all the food products need to be certified by the government, the department still constantly inspects the pesticide and hormone residue in order to ensure the safety of the food.

2.Monitoring workers
      All the workers in Din Tai Fung need to have health checks periodically. The company especially focuses on the sanitary education. They constantly check the amount of bacterium on staffs’ hands and always remind the staffs to keep their working environment clean.

3.Monitoring production process
      There are strict rules for entering the working places. All the staffs are required to wear special clean suits and then enter a cleaning room to remove dust, hair, and dirty particles before working. The staffs also need to wash and sanitize their hands and are inspected by their supervisors. During production process, the temperature and hygiene of the working places are also strictly regulated and controlled by this department.

4.Monitoring food products
      The department daily checks the amount of the bacterium in their food products. They monitor the quality and expiration date of the food and frozen products.
