Team Work

      Din Tai Fung believed that team work is the most effective method to run business; therefore, they practice the SOP and the delicate cooking skills in the food producing process.

      They divide the food producing process into many steps. For example, it takes at least six people to make steamed pork dumplings in the kitchen. Kneading dough, rolling the dough to make wrappers, measuring dumpling stuffing, making dumplings, monitoring steamers, and bringing dumplings to the table are the basic steps to serve the dumplings to customers.

      “Dumpling Stuffing” follows the same pattern. Trimming tendon, membrane, and fat in meat, cutting the meat, measuring the weight of the meat, grounding all the meat, and mixing meat gelatin and seasoning together are the steps to make dumpling stuffing. Each step is handled by a specific staff.

      Moreover, the meat gelatin in dumpling stuffing has the same producing process: simmering, mincing, rinsing, soaking, removing the smell, and filtering. Din Tai Fung is dedicated to ensure the finest quality in their food; therefore, they need efficient team work to maintain the food quality.
      Because of team work, the food in Din Tai Fung is able to have standardized quality. The food also can have better taste because it is not made by machines. To sum up, efficient team work truly makes Din Tai Fung run their business successfully.
