       Five star cuisine comes from fresh and high quality ingredients. Din Tai Fung strictly selects their ingredients for their meals.

      For example, there is only one piece of meat inside a Huzhou Glutinous Rice Dumpling. However, this piece of meat has a story behind. The meat comes from pork ribs. There are thirteen parts in a pork rib. The meat from the first to the third part is too tough to chew. The ninth to the twelfth parts contain more fat, so they are not healthy for customers. Din Tai Fung insists on using the best part of the meat to make dumplings; therefore, the dumplings taste totally different from the dumplings in other restaurants.

      Moreover, the chicken in the steamed chicken soup is from sixteen-week-old Silkies, raised in Tai Dung. Generally speaking, chickens sold in the market are normally nine to twelve weeks old. Why does Din Tai Fung select sixteen-week-old chicken? A sixteen-week-old chicken is mature enough to metabolize all the antibiotics and hormone left in its body. Besides, the taste is the best. Customers not only enjoy the delicious soup but also taste the healthy and non-toxic chicken at the same time.

      They also use rear leg pork to make the dumpling stuffing. They use freshly fished spear shrimps to make dumplings. The rice in Din Tai Fung is the Tai-Keng No. 9 anti-tumor rice. The sponge cucumbers are from Penghu. The cucumbers in appetizers are cut in the same size.......

      Selecting ingredients carefully and strictly, Din Tai Fung becomes one of the most successful restaurants in Taiwan.
