Preface

"Sugar" was one of the biggest economic industries in Taiwan in the early years. Foreign exchange income was derived from the export of sugar. Therefore, Taiwan sugar played an important role in the early years of Taiwan's economic development. Sugar cane is a temperate and tropical crop, is the raw material for the production of sugar cane, pingdong just has a good natural environment, suitable for planting sugar cane, and labor force close, conducive to the development of sugar economy. This chapter describes the geographical environment and process of early sugar production.
