Menu Introduction

       Our third training lesson was to introduce the menu. Miss Huang, our instructor, demonstrated us how to appropriately interact with customers. We wrote down every word she said.
      “Excuse me. Are you the first time here in Din Tai Fung? Do you want me to recommend some popular meals for you? Is there anything you don’t like to eat? Shrimp? OK! Spicy food? OK! Let me introduce our menu for you.”

      Miss Huang said that if we really needed to look at a menu, we shouldn’t take the menus back while customers were looking at them. Therefore, they encouraged the staffs to memorize everything in the menu. It was impossible for us to be familiar with the menu in a short time. She suggested that we could either take extra menus, or politely asked customers if we could borrow their menus. We needed to make sure every customer had their own menus while they were ordering.

      Moreover, there were some bigger pictures on every other page. The bigger pictures indicated the most popular meals of a category. Therefore, we could simply recommend the most popular meals to customers.

      “Have you ever tasted our dumplings? Steamed dumplings are our famous and popular meals. We have many kinds of dumplings, and pork dumplings are the most popular ones. There are ten steamed dumplings for one set. You can also order five dumplings for a half set.”

      They provided a half set dumplings for the customers in small groups, so the customers could enjoy the meals with no pressure and order more kinds of food.

      “Our steamed dumplings are very special. The dumplings are sophisticated and delicious. They are filled with meat jellies inside. Our master chefs have tried different ways to fold the dumplings and created the Golden Eighteen Folds.”

      “All right! Our most popular meals are steamed dumplings, fried shrimp dumplings, and Shao-Mai. There are also steamed pork buns and chicken buns. We have mushrooms inside our steamed chicken buns. For the soup, I recommend chicken soup.”

      What Miss Huang said was just an example. She reminded us that we still needed to respond customers according to their reactions and responses. Most importantly, “always remember to smile”.
