Port Tea Almond Cookies

When making the Port Tea, there usually are some pieces left behind. We call these pieces “fannings”, the pieces left from tea-making process. These pieces are not too thin, but they are very dry. We consulted our Chef Mama of the way to grind the fannings into powders. Chef Mama told us that we might ask for the assistance from any Chinese Herbal Medicine Store. After their professional grinding process, we may attain the tea powder that is thinner than sand and use it to make Bong Cookies. After the discussion with our expert, we decided to make cookies of special flavors, and the Port Tea Almond Cookies was then come into being. The following are the ingredients and methods of Port Tea Almond Cookies:

Ingredients



  • 2 egg white
  • 50g light brown sugar
  • 40g soft flour
  • 25g unsalted butter
  • 100g America Almond Slices


Procedures as followed

  • Measured all ingredients. Melt unsalted butter in a double boiler.
  • Sieve the soft flour. Take two eggs and separate the yolk, leaving only the egg whites.
  • Put the light brown sugar and the salt into egg white to stir till they are evenly mixed.
  • Turn off the fire and add in sieved flour, stir until smooth.
  • Mix the melted unsalted butter with the batter evenly and add in some cream.
  • Mix almond slices into the batter, stir softly to avoid the almond slices from splitting.
  • Seal the batter with plastic wrap and place it in the refrigerator for 30minutes.
  • Take out the batter, scoop it with a spoon and place the batter on a ungreased baking sheet.
  • Wet the hands with water and flatten the batters, make them even so the cookies will be colored evenly during baking.
  • Pre-heat the oven in 150℃ and bake the cookies for 12 minutes. After the cookies starts to turn brown, adjust the heat to 130℃.
  • Baked for another 6-7 minutes before taking it out for cooling.

Tips

  • Once the Almond Cookies are cooled, they must be placed in a canister immediately to keep the cookies crunchy.
  • When flatten the batter, wet the hands with clean water so it is easier for the flattening process.
  • When mixing the almond slices with the batter,stir it softly to avoid splitting.
