Future of Mucha string noodles

During the interviews concerning the Mucha string noodles, we often asked about the respondents’ views on the prospect of the Mucha string noodles and received different answers. Ms Chang Bao-Wen considered that although there is no problem with inheritance at present, if some day in the future, the land price once again surges up or people think it too arduous to carry on the craft of handmade string noodles, we may find no one to take over the business. Mr. Chang Gang-Ming of the machine-made string noodles factory thought that given the realistic considerations, a majority of the handmade string noodles workshops will vanish. However, people of the restaurants all considered that since handmade string noodles are welcomed by everyone, it will absolutely sustain in the future. Mr. Liu Qin-Xian, the old master of the Liu Xie Chang Noodles Factory, thought it a great pity to let such a wonderful craft of making handmade string noodles fade out of history and wished that some people would be interested in carrying on the craft, but the proprietress considered that no one will go to great pains to carry on this laborious craft. The street magistrate and the clerks of the District Administration all thought that they may promote the craft by organizing some relevant activities, but a craft can no way be carried on and developed merely through a few activities.

We all think that the handmade string noodles are delicious and that the craft and the scene of string noodles gracefully aired in the sun are precious, but in real life, as perceived by the proprietress, to make a living by making handmade string noodles, people must be busy working from morning till night and cannot afford even the holidays for rest or a tour with the family. In spite of all these hard work, the practitioners are still unable to make a fortune out of this craft, which, in the old days, people learned to earn their bread. How can such a craft meet the expectations of the young generation of today? The handmade string noodles will probably sustain in the future, but are doomed to become more and more the minority; Mucha used to a place reputed for its string noodles, but now, how many people still bear in mind this history? In Lugang and Jinmen, the business of string noodles has found the proper soil for growth with the development of tourism, whereas in Great Taipei, since the small houses will by no means promote this area as a paradise for tourism, the practitioners of string noodles can only continue weaving these fortunate threads in the narrow lanes, thus presenting happiness and hope to the people. We wish that through this study, people would once again recall the memories of the String noodles Gantry, think over and cherish the beautiful and precious industries that survive on our land, so that they would develop a stronger emotional attachment to our hometown.
