Future of Mucha string noodles

Through participation in this study, I am aware of the fact that the Wenshan District used to be called the “String noodles Gantry” and the procedure to make string noodles. Although making string noodles is a tough task and not many people are in this business today, there are still some practitioners who are happy to bring fortune to others, just like the boss of the Liu Xie Chang Noodles Factory with whom we interviewed and who was amiable to answer whatever questions we asked. The proprietress also told us: “Work hard on your courses. Don’t learn this craft. Making string noodles is too toilsome.” Nowadays, the youths tend to spare themselves from toil and hardship, and this industry gradually goes downhill. However, in our daily life, as the string noodles signifies longevity, people demand it on birthday, festivals and holidays, and therefore, I still hope that some people will carry on this craft to benefit our posterity.

One must know about his hometown to take in the local culture, and must exert himself to do what he is doing to bring into full play his capacity. I am sure that I have made great efforts since the very beginning of this study, and I have no regret whatsoever about participating in the study. I made the most of every minute or second to earnestly collect and analyze the information so as to advance this significant study.

Through the statistical result, we discovered that no many people know that string noodles are a special local product of Mucha, and this should be ascribed to the decline of the business of handmade string noodles. In addition, among those who know this special product of Mucha, only two are not natives of Mucha, which indicates that this special product is known mainly to the natives of Mucha. In our interviews, we discovered that some of the Muchaese above the age of 30 have seen the scene of making handmade string noodles in reality and some have watched it on TV; the younger generations in their tens and twenties for the most part know about this process through TV programs; and most kids are aware of this craft, all because of their visits to the handmade string noodles workshops arranged by the schools.

What is more, since all the current dwellers in Mucha do not live here from birth and the string noodles workshops of Mucha region for the most part stand on or near Mucha Road, from where some people live far away, some people, in spite of their mature age, do not know about this special product.

Through the statistical analysis, we discovered that most people know that string noodles are either made by hand or by machine, especially those above the age of 30, all of whom know this fact.

We also discovered from this statistical analysis that although some people know there are handmade and machine-made string noodles, they are not aware of the difference between these two types of string noodles. These people are mostly under the age of 20, maybe because they are only responsible for eating the string noodles.

All those who know that the two types of string noodles are different can point out where the differences are, and the differences in taste and production method in particular are checked by most people.

In our questionnaire interviews, among all those who have checked the option “different in taste,” only one prefers the machine-made string noodles, and all the others prefer the other type, which means that handmade string noodles still takes a considerable market share in that many people still prefer handmade string noodles in consideration of its special taste. All those who have checked the option of “different in price” prefer the hand-made string noodles, which means that in spite of the higher price, many people still choose the hand-made string noodles without being biased against it. It is a wonder that even most of those who do not know the difference between the two types of string noodles prefer the hand-made string noodles. Some of them made this choice only because the word “hand-made” sounds more persuasive to them.

Hence, although the hand-made string noodles workshops are going downhill, the hand-made string noodles are still in great demand in the market and in the dietetic manual of the people today, it may have been assigned such an important role that its prospective development is not to be underestimated.
