Jiguang Cake

In Ming Dynasty, a general Qi, Ji-Guang ordered his troops to make their ration into cakes for marching season because it is easy carrying and easy to use. Soldiers did not need to cook every day, they were armed anytime thus.

Jiguang cake is traditional snack. It's also

used as offering to gods in religious

ceremonies.

Oyster omelet is often eaten with Jiguang

cake.

Ding-Bian-Hu (Wok Edge Paste)

This dish was originated in Fuzhou. Its soup stewed with fish, dried fish and lots of clams. Every aunty in Matsu is good at cooking this dish.

Fish Noodles

Fish Noodles are special handmade noodles in Matsu. They are made of scomberomorus and Miichthys miiuy. In early times, people made fish noodles and fish meatballs of remaining fish for keeping food longer.

Mix the flour, water and the flesh of fish to a dough. Knead the dough repeatedly until it become smooth.

Pat the smooth dough into a flat cake on a pan. Using low heat to dry the dough.

Cut the dry dough into strips. And here it is! Fish noodle!

Then dry the fish noodles cover by dust screen naturally.

 

Fish noodles can only be made by hand. People usually stir-fry or

cook fish noodles with soup.

Matsu Fish Ball Soup

Fish ball soup is a famous snack in Fuzhou. Fish ball has two types, one is with stuffing and another is without stuffing. They are made of fish paste of scomberomorus and Miichthys miiuy, really yummy!

We invited villagers to teach us how to make fish balls. We did never know making fish balls is so complicate. We buy particular species of fish, removed their scales and guts, slice the meat, add some starch powder and mince it with a machine. We can't imagine how difficult it is to make fish balls without the machine!

Mix the seasoned fish paste evenly

Fling until gluten

 

Use hand squeeze a ball and take it down with spoon

Thin Noodles with Old Rice Wine

Thin noodles with old rice wine is a dish which every mother is good at because it is a necessary dish for body nursing and postnatal care. The cooking steps are as follows. First, heat black sesame oil and saute with chopped ginger. Second, put egg in and fry until little bit scorched. Third, fry with meat which is pickled with red vinasse then add old rice wine right away. Finally, cook with cooked thin noodles and some seafood then pour some old rice wine again. It is excellent for keeping one's body warm in winter.

Fish Dumpling

Fish dumpling in Matsu is definitely worthy of its name because its wrap is hand made only by fish paste and potato flour. After exposure to the sun and blow of the wind, the fish dumpling is chewy and full of taste. It is very popular because you will be never tired of eating it!
