Although the handmade string noodles are a product of an important traditional craft and the preference of many people, the machine-made products still predominate in the string noodles market for the following reasons:

Mass production by machines:
For example, the Xie Chang Noodles Factory may produce ten thousand packs of string noodles each day. Being nowhere near such production capacity, many workshops of handmade string noodles can find no way into the supermarkets and have to sell their products through retailers.

Low costs:
Thanks to the mass production, the machine-made string noodles are produced at lower costs and sold at lower prices, thus attracting many people to put them in their trolleys.

Quality controllability:
Since the conditions are preset by the machines, the quality of the string noodles produced is unlikely to vary from day to day, but sometimes, some irregularities might occur due to the master’s abnormal state or the special weather. The production is quite toilsome in winter.

Hygiene controllability:
Although in certain cases, the handmade string noodles may exhibit good quality under close supervision of the boss, and some inferior producers may supply substandard machine-made string noodles, a majority of machine-made string noodles are monitored by the sanitation administration and their hygienic conditions are guaranteed by the government.
