Since Mucha used to be called String noodles Gantry for the booming industry of handmade string noodles there, the visits to the handmade string noodles workshops constituted a very important part of our study, but only after these visits have we realized how few such workshops still remain in this region. Moreover, few people know if there are any noodles workshops here other than the widely known Liu Xie Chang Noodles factory. Although Mr. Gao, the warm-hearted magistrate, had informed us of the existing handmade string noodles workshops, we could not find the San Yang Ri Fa Noodles factory on Baoyi Road until we went direct to Shun Yuen to taste the sesame oil string noodles. However, the proprietress of the factory only accepted our interview at the gate and refused to let us into the factory. Afterwards, Xiao-Han managed to contact the string noodles factory on Xiuming Road through her relatives, but they would accept no one else but Xiao-Han and her relatives to visit them. Maybe the aged bosses of these string noodles factories were unwilling to be bothered by us, uninvited guests.

We called at the famous Liu Xie Chang Noodles Factory several times, and the boss was pretty amiable to us. Mr. Liu Qin-Xian, the old master, earnestly responded to our questions and expressed to us his wish that more kids would learn the craft of making string noodles. The proprietress and the masters were all very nice and did not reject any questions asked. Even when they had their hands full, they would spare some time to answer our questions, for which we are truly grateful. We found in other places some reports on this factory and have them attached hereto as reference information for our readers to show them the beauty of this traditional craft.
