Introduction

The founder of A-chang Taiwanese Meatballs is Yong-zhong Shih. As a child he was often referred to by his nickname "Zhong (鐘)," whose Taiwanese pronunciation sounds like "Chang (璋)," and hence he named his Taiwanese meatball specialty shop, which he founded in 1948, A-chang Taiwanese Meatballs. This shop has become even more famous in recent years thanks to its appearance in Gidden's moive You Are the Apple of my Eye. 

Compared to the Taiwanese meatball of other shops, those made here at A-chang are fried, and hence the outer dough layer radiates a golden and pristine color. The outer layer is chewy and tasty, and the stuffing inside, consisting of minced pork, mushrooms, bamboo shoots and what not, feels neither greasy nor oily. Coupled with the special sauce made of coriander and sticky rice, the cuisine is absolutely divine.

1.How long have you been in business? Which generation are you?

We’ve been here for around 50 years, since the 1960s.

2.How much are you able to sell a day?

On weekdays around 1000 meatballs per day, and on weekends around 2000 a day.

3.What are your specialties?

The Taiwanese meatballs, of course, and our soup!

We begin to prepare cooking material at six A.M., and it takes about 2 hours.

5.What is your management philosophy?

We only serve the best meatballs.

6.Were there any experiences since your opening that you found particularly difficult or unforgettable?

Business was slow and disappointing at first. But with modifications to our recipe and our unwavering insistence on using only the freshest ingredients, business begin to take off.

7.Do you have a few words to share with us?

The first step is always the hardest one to take, and it never gets easy; only perseverance will carry you through.

8.Do you find anything that is in need of improvement around Xiaoxi?

There are too few stores, and a lot of the spaces are simply vacant, so it's hard to attract more people.

Reflections

  The staff members and the owner are all very kind, and the Taiwanese meatballs were delicious. This store is famous because Gidden's movie The Apple of my Eye was once filmed here. Staff members encouraged us that, even though beginnings are always hard, we can only succeed by never giving up.

A-chang Taiwanese Meatballs once set a Guinness world record by making the largest Taiwanese meatball ever, which weighed 685 kilograms. It must have taken a lot of time. A shop that serves meatballs this good, is a must to visit for anyone.
