Mr. Huang Kuo Fong

There were many rice dealers here, recently, the traditional stores have been displaced by supermarkets. As a result, the rice stores are changed noodle shops. We interview two stores and the contents are as follows:

Q: How long have you worked here?

A:Oh, we have run the business here for decades. I’m the third generation.

Q: Do you sell noodles or flour?

A:Both are available.

Q: So, selling noodles is better and easier than selling other items?

A:It depends. We used to sell the dumpling skins. The items available vary because of the change of time. However, we are the first shop to make noodles.

Q: Who is your teacher?

A:My grandpa. I am the third generation.

Q: Where did your grandpa come from?

A:From Fukien.

Q: What is the difference between past and now in selling?

A:My grandpa didn't sell dumpling skins and wonton skins.

Q: What did he sell in the past?

A:Just normal noodles.

Q:When did you startesd selling dumplings?

A:We have sold dumpings since my father run the business.

Q: So was that 40 to 50 years ago?

A:Yes, almost. There are most military villages in Fongshan, and they extremely love noodles. That was why we chose to sell noodles.

Q: Does markup affect your bussiness?

A:A littlel bit.

Q: Could you teach us how to make dumplimg skins?

A:Dumplimg skins are made of water and flour, and you knead it. Then it’s machine’s bussiness.
