As different dishes have different colors, a chef is required to match plate color with dish color. Each dish has a certain amount, so the chef shall control the amount. If the dish excesses the amount requirement, he/she needs to write a report on it. Dish quality is also important. Staffs need to practice how recipe and store reasoning so as to become skillful. For instance, a staff needs to receiving training on what seasoning for which dish, how to set the table. Hygiene shall be controlled. Service staffs would gather for the inspection of nails and cloths. Jewelry is not allowed except watch. Hygiene is very important.

3. What are the requirements of catering service?

Good concept, positive attitude, health, and prudence. If a service staff answers questions improperly, he/she may harm the company's reputation.

4. What leaves the deepest impression to you?

Once, a Japanese elementary school came to Forte Hotel to hold a Thank-you-teacher banquet. They asked me to control the screen. When the students finished singing and left, we should lower the screen for the introduction of students. First, the screen was lowered to display a video. After the introduction, it was raised. However, before the screen was raised, students came to the stage and stood in front of the screen. The dress of a girl was stuck by the screen, so she was raised along with the screen. The light was not turned on, so no one noticed that.

The situation then was different from present. If it happens now, the staff in the front will notice me. But then, no one noticed her. Suddenly, we heard a scream. And I lowered the screen immediately. The girl was scared.As I could not speak Japanese, so I could not comfort her. I could only ask her teacher to do so. She cried and was scared. Our company apologized for this and took her to a hospital for exam and treatment. The accident occurred, though we did not want it to happen.

Postscript

F&B Manager has to manage many trivial matters, such as information, management, and decision-making. Also the hygiene habits and clothing of the chefs! Such a scary accident happened at F&B Department. A Japanese girl student was raised up by the screen. It was incredible.

But F&B Department processed it well! They appeased her, apologized, and took her to see a psychologist. I can feel the service spirit of F&B Department "Customer is the most important"!
