The total bacteria number of cooking soy sauce is slightly higher than that of light soy sauce. If people take the cooking soy sauce as the light soy sauce for a long time, people are liable to suffering from gastroenteritis and other diseases due to the weaker body resistance.
2、Pay attention to the time when to add soy sauce in the dish
Please attention to the time when to add soy sauce in the dish. As for braised fish and braised pork, the soy sauce should be added earlier; as for the stir-fried vegetables and other general fried dishes, we had better add a little soy sauce before dishing the vegetables up out of the pan. In this way, the high temperature in the pan will not destroy amino acid and the sugar caramelization and souring in the soy sauce will also not occur. Some people will not add the soy sauce in the pan while cooking the dishes; instead, they like to add the soy sauce into the dishes directly after dishing the food up out of the pan. If you do like this, you must use the high-quality soy sauce whose total bacteria quantity has reached the standard. You had better not use the ready-to-eat cooking soy sauce.
3、Use the simple method to prevent soy sauce from going mouldy
We also need to care more about the storage of soy sauce. In order to effectively prevent soy sauce from going moldy, adding a few drops of cooking oil, putting several cloves of peeled garlic or adding a few drops of white spirit can have a better function of mould proof.
4. Consume a moderate amount of soy sauce to keep healthy
Although the nutritional value of soy sauce is very high and it contains up to 17 amino acids, various Vitamin B and a certain amount of calcium, phosphorus, iron, etc, the salt content of soy sauce is also very high. Therefore, in normal times, we had better not eat too much soy sauce. The salt content of soy sauce is up to 18%—20%, i.e. 5ml soy sauce contains about 1g salt. In addition to seasoning, the salt in the soy sauce is added for the purpose of preventing the soy sauce from being decayed and deteriorated.
5. Who should eat less soy sauce
Those who suffer from hypertension, nephropathy, cyesedema, ascites of hepatocirrhosis, heart failure, etc. should be careful with the eating soy sauce in normal times. Otherwise, the disease may deteriorate.
