Project Proposal/Summary 

About forty years ago, a group of makers of Fuzhou string noodle moved to Mucha, Taipei, where they launched the business of handmade string noodles and supplied nearly all the market of Great Taipei with string noodles at that time. In those days, there were people drawing noodles every day, and on clear days, shining in the sun were drapes of string noodles scattered throughout the streets, which in itself became marvellous scenery. However, with the development of Taipei into an international metropolis, the gradually deteriorating environmental pollution and the changed working and dietetic habits have led to the decline of the Mucha string noodles from the height of their prosperity.

As luck would have it, we accidentally found the workshops of handmade string noodles hidden in the recess of lanes, and this delicious traditional wheaten food kindled a curiosity about the origin and history of the Mucha string noodles in us, students of a school in Mucha. We hoped to understand this industry on which the dwellers once prided themselves on, and wished that through introducing this special topic, more people would have a deeper awareness of this land and then care more about its development.
