Taiwan's geographic location falls between tropic and sub-tropic zone. Its environmental condition is very suitable for the growth of sweet potato. Sweet potatoes are used as food and auxiliary provision as such
it is the main crop in Taiwan. In order to push ahead with varieties of sweet potato products and make them become more competitive, manufacturers of sweet potato have researched more than 30 processing products of sweet potato for consumers' satisfaction. Sweet potato brew is one of the processing products which is being developed. Manufacturers think it is not only offering different flavor wine products for consuming market, but also solving the problem of surplus sweet potato by sweet potato itself, which has been over-produced. They help to develop diversification of sweet potato products. It also increases farmer's income.

1.Procedure
Ingredient choosing→Steaming and Mashing→Acceding to red yeast→Adding sugar water→
Distilling in the pot→By-product distiller’s grains.
2.Illustration
a.Washing:Pealing
b.After steaming, .put proper water, mash it and put it in vat to wait it become cold.
c.After 2 days of putting in vat, Accede to red yeast to ferment.
d.After 1-week fermenting, add sugar water.
e.After 3 ~ 4 days, distillate it again. Then it becomes sweet potato brew.
3.The left distiller’s grains can be feeding stuff for livestock or compost for crop plants. |

The Manufacturing Result of Sweet Potato

|
JinMen Agricultural Research Institute and The Unit of Production and Marketing of Sweet Potato of ShinHwa Farmer’s association has used many kinds of sweet potato, such as, Jinmen # 9, the local grown, Tainoo# 57 and Tainoo#66 to make sweet potato brew. Those sweet potatoes, Tainoo#9, local grown and Tainoo# 57, containing high starch can produce higher alcohol rate, around 26-30%. Production alcohol rate for Tainoo # 66 which contains lower starch is about 23-25%and average is 24%. |

A vat of ingredients can produce an average of 25 kgs of sweet potato brew. Its cost is figured out as following:
(1)Ingredients: 100 kgs of sweet potato, NT 800
- 2 kgs of red yeast, NT 386
- 12 kgs of sugar, NT 340
(2)Expense of equipment consumption:NT 200(including fuel and steamy equipment)
(3)Wages: NT600 (Working hours, 8 hours, NT 400 per day)
(4)Total NT 2326. |
Making sweet potato arrack by sweet potato

So far, the processed sweet potato brew doesn’t have a special flavor. Because of its low cost, it is with potential development that we are able to produce sweet potato alcohol by the over-produced sweet potato during abounding season. Additionally, making of pineapple or grape with sweet potato to make sweet potato-pineapple brew or sweet potato-grape candy can not only lower the cost, but it can also help to expand local characteristics and promote industry of sweet potatoes.
